PHILADELPHIA (KYW Newsradio) — Victory Brewing Company’s newest taproom sits at arguably the most patriotic address in Center City: 1776 Benjamin Franklin Parkway.
Founder and brewmaster Bill Covaleski expects to open his fourth Pennsylvania location next month. The building is connected to The Terrace on 18th apartment complex, which was formerly an Embassy Suites.
The opening has been two years in the making.
“We were not yet in the pandemic, and we had lots of ambitious hopes to jumping right into hospitality quickly,” Covaleski recalled.
There are two levels and a basement floor. “Probably the most iconic thing about this is the rooftop deck, where we’re going to be able to seat about 78 guests — 338 in total.”
The hundreds of customers can choose from 30 beers on tap, five of which will be exclusive to the Philly location.
“We have a seven-barrel custom system, which we’re going to be serving five beers directly from the serving tanks,” Covaleski said.
As for food, Victory’s famous pretzel is a must.
“These are hand-built, hand-baked pretzels,” he explained, “and they come with two accouterments: a cheese and also a Hopdevil mustard. So we utilize one of our famous IPAs right there in the mix.”
And that’s not the only item on the menu that is made from Victory beer.
“Our cheesesteak — Philly classic, right? It’s going to have an interesting twist to it because we use Prima Pils in the mix of our cheese spread.”
Victory’s other locations include Downingtown, Kennett Square, Parkesburg, and Charlotte North Carolina.
