The dining room at Chicago’s only restaurant with three Michelin stars is closed, along with all the other dining rooms in the state. But starting Friday, the kitchen will be open for carry-out.

You probably wouldn’t associate Alinea with grab-and-go.

But co-owner Nick Kokonas is reopening the kitchen on Friday for curbside take-away.

Beef Short Rib Wellington, $35.

“We’re going to run seven days of the Wellington. And by the following Friday, we’ll have something new.  And we’ll do that for as long as we all need to be sheltered in our homes and safe with each other,” he said.

Kokonas had to furlough almost 300 Alinea Group employees this week, and he will bring some back now as he ramps up carry-out.

Alinea Group will share any profits with the entire staff, he said.
