
CHICAGO (WBBM NEWSRADIO) -- A new state law will require Illinois schools to offer vegetarian and vegan lunch options to students, but not until next year.
Schools will be required to offer plant-based meals to students, but only if the meals are requested ahead of time.
State Senator Dave Koehler of Peoria responded to critics, who worried about the cost to schools.
"This is not going to affect all schools, because you may have students that don't request this, but where you do, I think accommodations can be made and they can be made in a very creative way that's not going to cost any extra money," said Koehler.
To give schools time to find cost-efficient ways to provide plant-based meals, the law doesn't take effect until August of next year.
