1/4 teaspoon baking soda
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, chilled, and cut into 1/2-inch pieces
1 cup whole buttermilk, chilled, plus more if needed
4 ounces sharp cheddar cheese, shredded (about 1 cup)
For the butter topping
1/4 cup unsalted butter, melted
1/2 teaspoon Old Bay seasoning
