Carrie recently took to Instagram stories with a “day in the life” feature, which not only shared what she has for dinner before every show but also gives a peek into her highly structured schedule.

Underwood explained to fans that for dinner ahead of every show she consumes two scrambled eggs with pepper, half of an avocado, and a large assortment of veggies including peppers, cherry tomatoes, and cucumbers with hummus on top.

According to Underwood, this is a “no exceptions” type meal.

The American Idol alum also shared she has a protein bar for breakfast, a protein-heavy lunch at noon, re-energizes with a mid-day snack, and curls up with a post-show “reward” of red wine and cheese.

During a recent interview with Audacy’s Katie Neal, Underwood shared there’s a lot more behind her inspiration to stay healthy these days. As a mother to two young boys, she is more focused on setting a good example and being around for them than she is looking good in her favorite outfit.

“I feel like when I was in my 20s, I was definitely trying to work out to look as good as possible all the time,” Carrie explained. “I feel like as I’m older, my priorities have just shifted.”

She continued, “I see my kids and I want to be around for them as long as possible, but not just be alive as long as possible — I want to be present and be around and be involved. I think about that often.”

Additionally, Carrie hopes to inspire her sons, Isaiah (7) and Jacob (4) to lead healthy lifestyles of their own. “There’s nothing bad about taking care of yourself,” she says. “I’m trying to be a good example for them as well.”

She added, “I really want them to be like, ‘Man, my mom was crushin’ it. Like, up until when she was in her 90s she was still working out and gardening and could haul stuff around…. My mom just kicked some booty, even as a little old lady.’”
