Kathy's Granola Recipe

2 C rolled oats (not instant)


1 c assorted seeds of your choice

1 c assorted dried fruits of your choice

1 Tablespoon ground cinnamon

1 c chopped nuts of your choice

1 c melted apple jelly (or orange marmalade) or maple syrup or honey

Preheat oven to 325

Combine everything and bake on a lightly greased sheet pan (you may need 2 or 3) and bake 30 – 40 minutes or until lightly browned, stirring half way through cooking

Cool completely and portion into servings and freeze, or store in airtight container

This is very high in fiber and is a great way to start your morning or to use as a healthy snack.  I suggest using it in a live culture Greek yogurt so you are getting your probiotics, your fiber, and an anti-inflammatory boost to your diet.  It also helps to use up some of your pantry items.
