
Over the weekend, my daughter celebrated her 10th birthday with a big Taylor Swift themed bash. My mom wanted to make her a special birthday treat and so my new favorite cookie was born! She is better known as Nana these days by her three grandkids so I will call these "Nana's Cake Mix Cookies!"
First off, I will admit that I was very skeptical about how these would actually turn out because of the limited ingredients...I didn't have high hopes but my mom generally doesn't let me down when it comes to food! These cookies are so simple and easy to make with just four ingredients. All you really need is a box of cake mix, an egg and an 8 oz tub of cool whip then some powdered sugar for garnish! We decided that we wanted to use strawberry cake mix to match the party colors and of course, we have to be a little extra and add some extra sugar to ours! We added white chocolate chips to all of our cookies and even put cream cheese icing between some to make cookie sandwiches...you could make them as it with no added ingredients if you would like! They were delicious this way though and tasted like strawberry cheesecake! They are light, fluffy and not too sweet!

Nana's Cake Mix Cookies were a hit at the party! They were so easy to make that you could even have your kids help out. The best part about this whole recipe is that you can change up the type of cake mix you use and the possibilities are endless...we've already started brainstorming other combinations we want to try! I will make some rainbow chip themed ones ASAP, my husband requested lemon and my mom wants to try red velvet! Try these out with your family and let us know what combination you try!
