It's finally chilly outside and if Jack Frost has been nipping at your nose, I have to perfect recipe to fight back. Allow me to introduce you to my personal Roasted Potato Soup Recipe. I've added a few pre-chopped and pre-measured ingredients to make your life a little easier.
Some folks may prefer to go the old-fashioned route and buy potatoes straight from the produce department, instead of the frozen section. If that is you, then I recommend using 4-5 medium-sized baking potatoes to bake then chop up for the soup.
I made this soup the other night and brought it in to share with the Magic 98.9 Staff. The soup was great the night before, but after sitting and absorbing all of the flavors over-night in the fridge, the soup was even better the next day.
Here is a pro-tip: Garnish with some of your favorite herbs, shredded cheese, crumbled bacon, sour cream, hot sauce. You can also serve as a side dishnext to a steak and salad. Just don't forget the rolls, you'll thank me!
