
Lately, Coleslaw has been a popular topic in my home. This time of year when more grills are firing up, a scoop or two of Coleslaw on the side fits perfect with anything BBQ. This year, I foresee more Coleslaw being made and eaten since my honey Ted had esophageal cancer surgery to remove Stage 1 Esophagus Cancer. The journey started last September.
Honey Ted's surgery was a success, and removed all the cancer! His doctors started him on immunotherapy for once a month for a year in hopes to keep the cancer away for good. He has his 3rd immuno treatment this week! Crossing everything. Since his surgery, going on 4 months ago, the journey has been a long one, and continues to be. It's a day by day progression with good and bad days when it comes to eating. Most things don't taste like much. What he enjoyed before surgery, he doesn't now. Most things he eats, it's because he has too, not because it tastes good to him.
One of the few things Honey Ted has been craving and enjoys the taste is Coleslaw. Even though he has to chew the heck out of it to eat it, the taste of most of them he's tried has brought a bit of joy to eating. I saw this Coleslaw recipe with a twist, because everything is better with Ranch! 'Tis the season for a yummy slaw with summertime BBQ! Enjoy!
Enjoy Summer Hits with the slaw!
1 cup mayonnaise
⅓ cup white sugar
¼ cup ranch dressing
¼ cup cider vinegar
¼ teaspoon celery seed
½ teaspoon Creole seasoning
¼ teaspoon ground black pepper
salt to taste
The directions say to put all the ingredients in a jar with a lid, then shake 'em up until dressing is smooth and creamy. Letting it get cold for an hour or more in the frig is a plus too. Supposed to work with 6-8 cups of chopped up shredded cabbage (regular / purple .. both) add some shredded carrots. Toss it in. I say chill again. Enjoy!
