When summertime hits, I start craving sweet LEMON treats! Lemonade, lemon cake, lemon pie, lemon bread, lemon cookies ... One day I decided to turn my favorite Lemon Pound Cake mix into cookies. I came up with these. It's best to make and bake them in the morning or late at night to avoid heating up your kitchen when it's 100+ degrees in ATX. They're good cold or warm, and really easy to make.
Mix 94.7 pairs well with cookies! Enjoy while eating!
Sweet Lemon Pound Cake Cookies
Ingredients:
Cookie:
1 Krusteaz Myer Lemon Pound Cake Mix (with lemon glaze)
1 tablespoon cornstarch
1 egg
1/2 stick of butter / margarine softened
2 teaspoons vanilla
1/2 cup white chocolate chips
1/2 cup of sugar
*Flour for the mixing
Topping:
Lemon glaze that comes with the mix
Vanilla frosting (store bought)
Directions:
Mix (with a mixer) all of the ingredients together except for the white chocolate chips and sugar for 2 minutes. Mix until it's pretty smooth / not lumpy and turns into a thick dough.
Use your hands or hand mix to add the white chocolate chips into the dough. Separate the dough into 6 cookie dough balls. Make them smaller for 12 cookies! *This is when the flour for mixing comes into play. If you use your washed hands to mix, flour them so the dough doesn't stick to your hands.
Roll the cookie balls in sugar. Press on a cookie sheet lined with parchment paper. Chill the cookie dough for at least 1/2 hour.
Bake in a preheated oven at 350 for 14-16 minutes. Until the middle seems done. Let the cookies cool down. Eat as is, or add topping.

Use Lemon Glaze that comes with the mix taking a 1/2 packet with 1 tablespoon of water. Mix until smooth. Mix the glaze with 1/2 of the vanilla frosting. Frost the cooled cookies and sprinkle some sugar on top.

Chill the cookies in the refrigerator until the frosting sets up. Eat them cold or room temperature. ENJOY!
