Chicago pastor's ice cream venture going strong after 24 years

(WBBM NEWSRADIO) – Rickey Singleton’s ice cream is not cheap, but it may be good for the soul.

The senior pastor at Spirit of Grace Church began making premium ice cream more than 20 years ago as he was on the Atkins Diet and craving a low-carb dessert.

“A lady walked into my office that was on my staff, told me that her husband had bought her an ice cream machine for their anniversary present and she was so upset with him,” he recalls. “And, I said, ‘That’s what I’ll do. I will make a low-carb ice cream.’”

His ice cream, which he began selling to parishioners 24 years ago, is no longer low-carb (the best-selling flavor is banana pudding). But the resulting Richard’s Super Premium Ice Cream has expanded its menu and offers online sales and delivery and pickup service at 110th and Langley in Pullman.

Singleton hopes to have his products in stores soon. As for the price, it’s $12 a pint, but he makes no apologies. Proceeds from ice cream sales has helped his church buy property in South Holland.

“You will find out it’s the best ice cream you’ve ever tasted in your life,” he said.
