
Minneapolis diners will be able to experience a unique dining environment when the doors to the new restaurant Juniper open this spring. The restaurant not only features a variety of vegan meals, but also THC.
Heather Klein, the co-owner and chef of Juniper, joined News Talk 830 WCCO’s Chad Hartman to talk about her restaurant.
While the headline is catchy, Klein says she wants to focus on vegan foods that are made from plants, something she says isn't as prominent in the city.
"We have a great vegan scene in Minneapolis, but we don't have a huge scene that focuses strictly on plants," Klein said.
Klein also says that while her restaurant offers THC-infused food and drinks, the main passion for the restaurant is plant-based dishes that go beyond the ordinary.
“I do think it’s a big driving force.… But what we want to be known for is showcasing plants and all the many fun things that they can do,” Klein said.
Juniper is set to open in May of this year and comes almost a year after the state legislature passed a law making THC-infused items legal in the state.
Once the doors are open, Klein says restaurant goers who want to add the substance to their dining experience can order 5 mg servings specially made in droppers. From there, the THC can then be added to drinks or food ordered at the restaurant.
“We’ll have different flavors. What we’re serving [at our event tonight] is a juniper berry with beet juice, and that goes into the drinks tonight,” Klein said.
When it comes to the pricing at the restaurant, Klein says that rates will vary, depending on the flavor and other factors.
