I'm all about a good crostini. I'm Italian so I am a big believer that anything can be turned into a crostini or what us Italians call " Bruschetta".
Sometimes I'll do an all veggie crostini with cucumbers and white beans, and sometimes I'll do your typical Italian crostini with tomatoes and parmesan cheese. Other days, I'll think of different ways I can incorporate other cuisines IE: Greek (with feta and olives and herbs) or Mediterranean (with hummus and chick peas and zaatar).
When I saw this recipe, I thought WOW that is something I could do. The thing I love about a simple bruschetta is you can have it for a snack or serve a salad on the side and make it a meal. You can throw it together very easily with almost anything in your fridge. However, If you have Blue Harbor albacore tuna, you can make it extra special. I love this Tuscan style crostini. You could also do a "tuna melt" type crostini and melt the cheese under the broiler for a different take.
