The US Department of Agriculture trying to stifle the Thanksgiving kitchen food fun... nah, they just want to keep you safe and illness at bay.
According to FoodSafety.gov, cook your turkey to 165 degrees, wash your hands, (specifically - wash, lather, scrub 20 seconds, rinse and dry) prevent cross contamination - a recent study found 60% of sinks were a bit of a science project tainted from that raw turkey.
And leftovers should be refrigerated within 2 hours after mealtime.
