Recipe: Sriracha Caramel Chex Mix

Sriracha Caramel Chex Mix

This is a fun twist on traditional Chex Mix and makes for a great snack for parties or anytime of the year!

Ingredients for the dry mix:


3 cups Rice Chex Cereal
3 cups Life Cereal
1 cup peanuts (you can also use almonds)
1 cup pecans (roughly chopped)
2 cups pretzels
1 cup sunflower seeds or pipits
2 sprigs of rosemary (finely chopped)

Ingredients for the Sriracha Caramel Sauce:

1 stick of butter
1 cup brown sugar
1/2 cup sriracha (adjust according to how much spice you like, use 1/4 cup for less spicy)
1/4 cup Karo Syrup (corn syrup)
1 tsp baking soda
1 tsp salt

Directions:

Combine the cereals, pretzels and all the nuts in a large bowl.

Combine the butter, brown sugar, sriracha, Karo syrup and salt in a medium or large saucepan. Bring to a boil over medium-low.

Let the combination simmer for several minutes then whisk in the baking soda. The mixture is going to foam up quite a bit, which is why you need the medium to large size sauce pan. Keep whisking until the baking soda is completely mixed in the sauce and the foam dies down some.

Pour the sauce over the dry ingredients and mix until well coated.

Grease a large baking sheet and pour the mixture onto the baking sheet. Make sure the mixture is evenly distributed amongst the baking sheet. Sprinkle the chopped rosemary on top of the mixture.

Bake at 200 degrees for one hour. I baked my Chex mix in a smoker just to add another level of flavor. You can certainly bake this in a traditional oven.

Let the mix cool slightly after removing from the oven and then break into pieces to eat.
