
Tex-Mex is a very serious topic here in Texas. Traveling to different parts around the state, you’ll find a thousand different ways to prepare the same dish.
One restaurant in Houston appears to be an outlier, as they are known all across the state for their iconic take on the classic bowl of queso.
As far as we know, the family-owned Los Tios restaurant is the only place in Texas where you can get a bowl of puffy queso.
Marina Paccione, a resident of the Meyerland area of Houston, told Chron, “I love puffy queso. I have been eating them for over 30 years, and they are definitely a family favorite.
"The creamy cheese combined with the satisfying crunch of the tortilla is perfection.”
The puffy queso begins as a corn tortilla, which is lightly fried until it puffs up which is then topped or stuffed with the fillings of your choice.
Gary Adair, co-owner of the family-run chain since 2000, said, “The thing that makes our puffy queso unique is the care and practice we have put into it.
"We use a special masa, and our bolla ladies (puffy queso experts) are always perfecting their art. Some of them have worked for us since the beginning and have the softest touch. They really put the time and care into what we consider a Tex-Mex delicacy.”
