SEBASTOPOL (KCBS RADIO) — Meet the King and Queen of Pork! Chefs John Stewart & Duskie Estes! They’ve earned that title after winning COCHON 555 both regionally and nationally.

They are best known as Chefs behind the popular but recently shuttered restaurant Zazu Kitchen at the Barrow In Sebastopol.  They are also farmers and raise chickens, goats, pigs and more on their Sonoma County farm.

If you can’t make it to the Gravenstein Apple Fair, come and get it at the Black Piglet Food Truck during summer weekends at Davis Family Vineyards in Healdsburg, Saturdays & Sundays, 11:30am-3:30pm.

Chef Duskie Estes with Liam
Black Piglet BLTServed at the Gravenstein Apple Fair

Ingredients:

  • Bread (We loved the sliced seeded sourdough bread from Nightingale Bakery in Forestville)
  • A perfectly ripe tomato (We either grow our own or get them from a local farmer at a Farmers Market)
  • Slices of our pasture-raised Black Pig Bacon
  • Lettuce (We either grow our own or get it from a local farmer at a Farmers Market)
  • 'The Black Piglet's' Tabasco Aioli

'The Black Piglet' Tabasco Aioli Ingredients:

  • 1 whole egg
  • 1 egg yolk
  • 1/3 cup fresh squeezed lemon juice
  • 2 cloves garlic, peeled
  • 1 1/2 cups pure olive oil
  • 1 teaspoon tabasco, or more or less to taste
  • kosher salt and fresh ground black pepper

Instructions:In a food processor, combine the eggs, lemon juice, and garlic. With the motor running, slowly add the oil and emulsify. Season to taste with Tabasco, salt, and pepper.

To Make the BLTToast the bread in a toaster or on a griddle with a little oil.  Smear with aioli, place lettuce, tomatoes, and bacon on top.  Add avocado if you like.  Top with the 2nd piece of bread.  Enjoy the best sandwich ever!
