Kathy Freston discusses her new book, "72 Reasons to Go Vegan"

Less than a generation ago, veganism was considered beyond fringe. Even in 2014, only 1 percent of Americans were vegans. Fast-forward to today—in the last five years, the number of self-identified vegans has skyrocketed 600 percent. Impossible burgers are now available at Burger King, and Carl's Jr., and Del Taco offers plant-based Beyond Tacos. And, according to the Plant Based Foods Association, sales of dairy and meat alternatives grew by 20% in US supermarkets in 2018—that’s a $3 billion surge in coconut milk yogurt, tempeh bacon, and the like.
