Have you heard all the buzz around Em Trai Sandwich Co. yet? I have so I was excited to talk to Chef Tung Nguyen. He is the 9th of 13 kids in a restaurant family (Thanh Thanh in old Gretna and our King Cake winner, Dough Nguyeners are his family!). Bet those holiday meals are reallllllly good.
He started at St. Roch Food Mkt and moved across the street to his first brick and mortar joint, Em Trai (EM Chai means "Little Brother" in Vietnamese). This kid is first generation New Orleans in his family and makes some KILLER brisket Pho, Banh Mi, and Bao sandwiches.
