Traditional Irish Guinness Gingerbread & Butter Pudding

½ Loaf of Two & a Half Irishmen’s Traditional Irish Guinness Gingerbread


¼ cup Raisins

1 ½ cup Milk or Buttermilk

½ tsp Cinnamon

⅓ cup Sugar

¼ cup (3 Tablespoons) Butter

3 Large Eggs

Directions

Preheat the oven to 350°F. 

Whisk together the eggs, sugar, cinnamon, and milk in a large bowl. Set aside.

Slice the Gingerbread and spread with ALMOST all of the butter and grease the dish with the rest. 

Cut each piece of bread into triangles. Lay the triangles, butter side up in the dish. 

Scatter the raisins between the slices.

Pour the custard over the bread soaking every slice. Set it aside to absorb for 15 minutes.

Bake in the oven for 50 to 60 mins or until the pudding has risen and is golden in color.
