
(WBBM NEWSRADIO) — A nationwide bird flu outbreak has helped fuel a surge in prices for eggs and the sharp increase has led bakers and cooks across the area to find alternatives to the incredible, edible egg.
Nicole Sopko COO of Upton's Naturals and Liberation Kitchen, a Chicago vegan mainstay, shared her tips for people looking for egg replacements.
“There are some commercially available options, but my personal favorite is tofu,” Sopko.
She says there's more than one way to replace an egg.
“So you can season and cook tofu in a way that's really similar to eggs. You wanna use like a firm or an extra firm tofu, and if you want that extra kind of eggy taste with it, in addition to what other seasonings you might add, one of the things that a lot of vegans use is black salt.
Additionally, Sopko says flax seed and apple sauce can also replace eggs and it's almost certain that someone else in their kitchen has done some legwork – or maybe "egg work," for you.
“Google whatever you're trying to make with the word vegan, and you'll find probably dozens, if not hundreds, of recipes that have already done kind of the science to replace the eggs.”
