
CHICAGO (WBBM NEWSRADIO) -- Things are a buzz inside the new 50,000-square-foot Time Out Market, located at 1115 W. Fulton Market, the site of a former poultry processing plant.
"You come in here and you'll say wow," smiled Julio Bruno, CEO Time Out Market Group.
The massive space is the latest resident to Chicago's exploding Fulton Market neighborhood.
"It's a market like a European Market. We have a giant sun roof that brings in the light, we have a sky box, like bleachers where you can watch the giant LED screen that will be playing digital art or even sports matches," he said.
Bruno's vision has been in the works since 2017. He said the original in Lisbon, Portugal opened in 2014.
"We have Chicago's best chefs under one roof. From tacos, to pasta, to fish, everything in between. It represents what Time Out editors see as the best of Chicago, our food critics," Bruno said.
Chefs from Purple Pig, FARE, Duck Inn Dogs, The Art of Pizza, Dos Urban Cantina, urbanbelly, Pretty Cool Ice Cream, Thai Dang, Sugarcube and many more will be serving up breakfast, lunch and dinner.
"The world has been conspiring for you and I not to go out, but Time Out wants you to change your habits and go out and take a 'time out." It's casual, but the food here is all James Beard, Michelin Stars, Time Out, Five Star winners. This is an experience for you that will be unique," Bruno said.
Lost Lake co-owners Paul McGee and Shelby Allison will debut Secret Sound, a new cocktail concept on the second floor.
On the third floor is Tony's rooftop bar.
"This is something that represents Chicago, this represents Fulton Market. We think it's a perfect fit," he said.
"We are not a food hall. We are a food and cultural market."
Time Out Market opens to the public on Thursday.
