
Celebrated chef Grant Achatz of Chicago’s Alinea is embarking on a new culinary venture: cooking for an online audience, with the test run on Friday afternoon.
Alinea Group Co-owner Nick Kokonas says he remembers when the Food Network used to have chefs cooking in real time.
“I remember watching those and going, ‘I’m learning this.’ And it’s kind of devolved into a bunch of game shows now,” he said Thursday.
So, Kokonas and Achatz — Alinea’s Michelin Three-Star Chef — will be going on Twitch, live-streaming the preparation of a meal. The segment is expected to go about an hour and 15 minutes. The plan is to do it every week.
The first meal: spaghetti carbonara. Kokonas says Achatz has never made this before.
“It’s not going to be Alinea smoke and mirror, foams and craziness. We’ll probably have some fun with that in presentation. But it’s all going to be stuff that you can go to your local grocery, buy the ingredients and cook at home.”
Kokonas says they expect to reach a different audience than Alinea is used to — a younger one.
