Chicago chef paying tribute to his mentor Charlie Trotter

(WBBM NEWSRADIO) — A Chicago chef will pay tribute to his mentor in his legendary restaurant later this month.

Charlie Trotter's restaurant at Halstead Street and Armitage Avenue in Lincoln Park was revolutionary when it opened in 1987.

The self-taught Trotter introduced ingredients from around the world into the Europe-centric realm of fine dining.

He was an early adopter of farm to table cooking and fully vegetarian tasting menus.

Trotter died in 2013, after the restaurant closed.

Trotter's employed a generation of chefs who went on to open award winning establishments of their own.

Alinea’s Grant Achatz is a Trotter alum, Cranes reports he's serving a Trotter's inspired tasting menu in the old restaurant space in Lincoln Park.

The Trotter's revival will run from Jan. 15 through the 26. Tickets to the dinners are sold out.
