
St. Patrick’s Day in 2020 was one of the first holidays impacted by the COVID-19 pandemic, and now Herb’s Bakery in Elgin hopes this year will be a little sweeter.
From green frosted doughnuts to Jameson-infused whiskey balls, the family-owned shop expects to see more foot traffic this year as things loosen up a little.
“Last year, although we were able to be open, people were really hesitant,” co-owner Wendy Wessel said Friday. “People came in, but it was just extremely quiet. This year, I’ve noticed we were actually busy yesterday. Today and tomorrow I know we’ll probably be a little bit busier.”
Herb’s Bakery went from a staff of 21 to 9, but the owners remain optimistic, especially as people celebrate the St. Patrick’s Day holiday.
People “are just happy they can finally do a little something — it’s nice to see,” Wessel said.
