Who’s needs a fast last-minute dessert for Passover-slash-Easter weekend?   If it’s you, how about coconut macaroons?  They’re on the healthier side of sweet treats, because of the fiber in the coconut, and they’re classic at Passover, and go well on an Easter buffet. Anyway I just love them. So I put a bunch together for you!
