Do not eat sandwiches made a raw ground beef, Wisconsin health officials are once again telling residents of their state.
So-called “cannibal” sandwiches, also known as “tiger meat” or steak tartare sandwiches, are sometimes consumed around the holidays in Wisconsin, the state’s public health department notes.
This past weekend, the agency in a tweet reminded Wisconsinites this is a very bad idea, given all of the bacteria that can lurk in the meat.
“Regardless of where you buy your ground beef, these risks are real,” the Wisconsin Department of Health Services says on its website. “Since 1986, eight outbreaks have been reported in Wisconsin linked to eating a raw ground beef dish, including a large Salmonella outbreak involving more than 150 people during December 1994.
“Ground beef should ALWAYS be cooked to an internal temperature of 160° F.”
