With recent changes to our Fan website, somehow Gavin Dawson’s Orange Magic Wings Recipe disappeared. If Hollywood can re release shows and movies with great success, surely the General will appreciate the re release of the recipe that took him to two straight victories over wing foe Shan Shariff.
It’s real easy
Step 1. Marinate wings over-night in Frank’s Red Hot sauce.
Step 2. Strain out sauce, pat down wings to dry them off mostly. There is plenty of sauce in the meat and the flavor will be in there. Leave some moisture for the rub to stick to.
Step 3. Apply your favorite orange/red BBQ rub. His favorite is the Holy Gospel from Meat Church
Step 4. Smoke wings for 2 hours at 225. He prefers to smoke with post oak wood in an offset to get a genuine Texas BBQ flavor profile. This can be tricky as post oak is among the strongest woods you can smoke with. His technique is to build a full fire and let it burn down to where the logs are breaking up and you have a very thin white or blue smoke coming out of the stack. If you aren’t getting a thin enough smoke open the door to the box to allow in extra oxygen.
If you are using this method, Gavin pulls the wings after one hour and move them to a grill/cooker that produces significantly less smoke. A gas grill or oven can do the job.
Step 5. Internal temperature of wings should be 165-170. If not, leave those tasty wings cooking for up to 30 more minutes. Upon reaching 170 apply maple syrup or BBQ sauce if you prefer with a brush to the wings, and grill them at 325 for 5-10 minutes to finish and make the skin crispy. Gavin prefers to do most of this last step with the hood open and he consistently rotates the wings to make sure they are done as evenly as possible.
Step 6. Enjoy the best wings ever.
