Veronica Hendrix is back with a delicious new recipe for a Smooth Smoothie.

Smooth Smoothie

If you follow Veronica Hendrix on Instagram you’ve probably seen posts of a smoothie she makes several times a week.

"I am not much of a smoothie fan because many of them are a bit sweet for my taste, loaded with calories, fat, and carbs. The recipe is below. Enjoy the audio portion. But the smoothie I make is not. In fact, it has no added sweeteners, fruit juices, or milk – just water. But you can certainly swap out the water and add any liquid you want."


Veronica’s Instagram Smoothie

Ingredients you will need

1 cup shredded red cabbage, loosely packed

1 unpeeled carrot, sliced

4-5 cherry or grape tomatoes (or 1 small whole tomato)

1 teaspoon fresh, chopped ginger

½ cup pineapple (fresh, canned chunks or crushed)

½ cup blueberries (frozen or fresh)

3 tablespoon plain yogurt (Chobani Greek whole milk used)

1 ½ to 2 cup water

4 ice cubes

Pinch of sea salt

How to make

For this recipe you will need a high-speed blender. It makes about 32 ounces or two servings

1.     Place the cabbage, carrots, tomatoes, ginger, yogurt, pineapple and blueberries in the blender pitcher or blending jar.

2.     Gently press the ingredients down to compact them a bit.

3.     Add ice cubes and pour in water. Make sure water does not exceed the fill line in using a blending jar attachment.

4.     Place top on blender or screen on screw on extractor blade, and blend for 1 minute.

5.     Enjoy with your environmentally safe, reusable straw.
