Halibut with Pearl Couscous, Veggies and a Lime Riesling Vinaigrette

Learn how to properly cook and perfect Halibut with Pearl Couscous, Veggies and a Lime Riesling Vinaigrette during Smoke ‘n Thyme with Dania.

Ingredients:
2 Halibut fillets
1 cup cooked Pearl Couscous
1/2 cup chick peas
1/2 cup edamame
1/2 cup cauliflower
Cherry tomatoes
Arugula


Lime Riesling Vinaigrette:
1/4 cup lime Riesling olive oil (if you don’t have a lime infused olive oil, you can use plain extra virgin olive oil and just add lime juice)
1/4 cup white wine vinegar
1/2 tsp. Dijon mustard
2 Tbsps. honey
1 tsp. lime zest
1 clove garlic, minced
Salt
Pepper

Halibut

Instructions:
Prepare the Lime Riesling Vinaigrette by mixing all ingredients together and shaking well. Refrigerate after mixed.

Heat one Tbsp. olive oil in a skillet on high heat. While that is heating, pat the Halibut fillets until dry.

Season with salt and pepper. Add the Halibut fillets to the skillet, skin side down. This will give the fillets a nice, crispy skin. Let them sit for about 1 minute, then turn the heat down to med. high. Cook the fillets until about 3/4 of the way done, then flip over. Add a couple of tablespoons of butter to the pan.

Cook until done (145 degrees internal temp).

Halibut

While the Halibut is cooking prepare the Pearl Couscous according to the directions. When done, rinse the couscous with cold water and let cool. Boil the cauliflower to the point where it is cooked, but has a slight crunch still. Let it cool. Add the chick peas, edamame and cauliflower to the couscous and mix together. Add a generous helping of the couscous mixture to a plate, garnish with sliced cherry tomatoes and pieces of arugula. Place Halibut fillet on top of couscous mixture and drizzle Lime Riesling Vinaigrette on top of the halibut and couscous mixture.

Serve.
