A restaurant in Pittsburgh is under a Consumer Alert after an inspection Tuesday found over 20 violations.
The highly-rated Yukiyama Japanese Restaurant on Murray Avenue in Squirrel Hill had a total of 21 violations, including four considered “high-risk”.
Some of the high-risk violations include evidence of a rodent infestation.
“Too many too count” mouse droppings were found in several areas of the restaurant including in the kitchen, warewashing room, near a freezer, storage shelves, behind chest freezers, in the office area, by the walk-in cooler and other areas.
One live mouse was found on a glue trap near the prep cooler.
Also, a wiping cloth found on a vegetable prep cooler cutting board that may have been used to clean an area with raw fish.
A rice paddle was found stored in a container of water, with rice, at 85 degrees.
A dirty knife and two bowls were rinsed off by an employee and then started using it again instead of it going through a full wash.
Several other items were found to have old dried food on them, including metal bowls, a fish mold and ice machine deflector plate.
A staff member was found rewashing the same gloved hands multiple times during the inspection without removing the gloves and another employee was found washing their hands without soap.
Also, inspectors found a “lack of organization and hoarding” in some areas of the restaurant.
For the Consumer Alert to be removed, the restaurant must remove all of the rodent droppings and clean affected area, clean all food contact surfaces, get a certified pest control to treat at least twice a month and remove all non-essential items.
