Restaurant in Southwestern PA 'out of compliance'

Over a dozen violations were discovered after a recent inspection of a restaurant in Southwestern Pennsylvania.

The Department of Agriculture’s Bureau of Food Safety says Ed’s Diner in Connellsville, Fayette County is “out of compliance” following the inspection on June 8.

Inspectors say two one-gallon containers of sausage gravy, “found under the basement stairs and have an internal temp. at 99 (degrees) and 115 (degrees).”

Cold foods need to be held at 41 degrees or lower and for hot foods, 135 degree or higher.

Inspectors say both gallons were thrown away.

Inspectors also say they reviewed with kitchen cooks how to properly cool large containers of food. They added they are not using ice wants or “other approved methods to properly cool food.”

Some other cleanliness issues were observed including a build up of old debris on dishwasher racks, in a utensil draw, on the bottom shelf of a bread storage unit.

A carpet was seen behind the front counter and was “sticky, soiled and not a smooth easily cleanable surface.”
