Local restaurant with food temperature issues 'out of compliance'

A local sushi restaurant in Southwestern Pennsylvania has been ruled “out of compliance” for the second time this year after a recent state inspection.

The Department of Agriculture’s Bureau of Food Safety says Sushi Wa on Wagner Road in Monaca had a total of six “risk factors” during an inspection on Tuesday.

A report shows several issues, including cooked shrimp being held at temperatures between 74.1 and 76.2 and not the safe temperature of 135 degrees or higher. That shrimp was thrown away during the inspection.

Ready-to-eat “fish product”, raw tuna, raw spicy salmon and other items were temped from 51.6 to 63.5 degrees, all above the safe cold-holding temperature of 41 degrees or lower.

Wiping cloths were found with raw fish on top of it in the sushi prep area and not in a sanitizer solution.

Also, some utensils are not being cleaned before being used on different types of raw meats with tongs seen with both raw beer and chicken on them in the prep table.

The same restaurant was ruled “out of compliance” after an inspection in early April.
