FC Dallas concessions stands will build on the 'Monster Taco'

FC Dallas gained national attention last year for its "Monster Taco." The dish included a pound of barbacoa, cheese, lettuce, tomatoes, sour cream, and hot sauce inside a fried tortilla. This year, the Monster Taco is getting a partner, and the two are starting their own concessions stand.

The Monster Taco and the "Double Stacked Quesadilla" will be sold at the "Everything's Bigger in Texas" stand starting Saturday when FC Dallas opens its season at Toyota Stadium in Frisco against Minnesota.

"I think family's bigger in Texas. I think flavors and food are bigger in Texas," Legends Executive Chef Erika Dabney said. "We put all of that together in one food concept here."

Details on the Double Stacked Quesadilla:

Four 12” Chipotle tortillas filled infused together with a blend of Monterey Jack cheese and cheddar cheese, stuffed with sautéed peppers and onions, half pound of adobo chicken, half pound of adobo steak and served with fire roasted salsa.

Hot Nashville Chicken Mac n Cheese featuring Casa M Spice
Creamy white cheddar mac and cheese, topped with Nashville hot sauce and BBQ spice, finished with fresh green onions and CASA M Chain Reaction spice.

Vegan Tenders
Crispy plant-based chicken tenders with house-made vegan honey mustard dipping sauce.

Birria Grilled Cheese
Five-hour braised beef short ribs, melted Monterey jack and cheddar slices grilled between two buttered sliced of Texas toast. Served with a side of consommé.
Location: Stand 3 – Tex-Mex Q, Stand 9 – Tex-Mex Q

Texas Caviar Salad
Vegan/vegetarian chilled bean and corn salad with apple and cilantro vinaigrette.
Location: Winners Club, Gallagher Club, Stadium Drop, Midfield Market

Grilled Vegetable Sandwich
Grilled seasonal vegetables, peppery arugula and vegan tomato veganaise on fresh-baked vegan artisan sandwich bread.
Location: Stand 2 - East Side Kitchen, Stand 10 - Corner Kick.

Elote on a Stick
Fresh corn on the cob smothered in cotija and chipotle mayo, topped with hot sauce and fresh cilantro, served with a fresh lime wedge.
Location: Stand 3 – Tex-Mex Q, Stand 9- Tex-Mex Q.

Funnel Sticks with Cherry Sauce
Fresh twist on the beloved classic funnel cake with fresh fried funnel cake sticks, topped with powdered sugar and sweet cherry dipping sauce.
Location: Stand 5 - Burgers and More, Stand 8 - Heineken Corner.

Dabney said the vegan and vegetarian options aim to provide a variety of dishes that would appeal to a broad cross-section of fans.

"It's called a 'Texas Caviar Salad' because it is a salad with bold and elevated flavors. No caviar," she said, laughing. "Strictly vegan."

Dabney said the new items focus on goals all professional sports teams try to reach with their foods. At a stadium, she said people buying items at a concessions stand need to be able to take their food back to their seats and keep it in their lap. She said many families and friends share different items.

She said that is why larger items like the Monster Taco and Double Stacked Quesadilla have so many different flavors contained within one dish.

"This really brings the family together and gives everybody in the family something they can pick from when they come here," she said.

She said Hot Nashville Chicken Mac n Cheese is also built with different flavors complementing each other.

"You just get the super creaminess of the mac and cheese and then a slight kick from the hot chicken, but it's perfect," Dabney said.

FC Dallas opens the 2023 season Saturday at Toyota Stadium against Minnesota.
