In partnership with DFW Restaurant Week, 1080 KRLD presents "Off the Menu," a new feature meant to provide a glimpse into the history, culture, and culinary secrets of long-standing iconic restaurants with ties to this year's DFW Restaurant Week.

In this episode, we hear from Dean Fearing, the chef behind the first American dining restaurant in Addison.

If Dallas had an official cultural ambassador, it would surely be Chef Dean Fearing.

For 42 years, he has been at the forefront of fine dining and at the helm of five-star hotels as a top chef and restaurateur. His legendary cooking and that charismatic smile speak volumes. He is also an accomplished rock and roll guitarist and musician and maestro of southwestern and classical French cuisine.

From his first days at the Fairmont's Pyramid to his reign at The Mansion on Turtle Creek and now and as owner of Fearing's at Dallas' Ritz-Carlton over the past 15 years, Dean has done it all, practically with effervescent joy.

No one really can ever wear those boots and turn out a dining experience in Dallas quite like him. That Dean's tortilla soup, lobster tacos, and his achiote glazed Broken Arrow Farms Nilgai antelope are the stuff dreams are made of.
