Chefs at AT&T Stadium prepare Thanksgiving dinner for 90,000 fans

Chefs at AT&T Stadium started prep work weeks ago for the Dallas Cowboys Thanksgiving game. The Cowboys host the New York Giants at 3:30.

Legends Hospitality says chefs started mixing and seasoning dishes about a week ago. Thursday morning, they started putting turkeys in the oven at 4 a.m. then hams started cooking at 8.

"We have giant equipment down there," says Executive Chef Marcelo Vasquez. "AT&T Stadium has kitchens on every single level. That's the difference between this stadium and a lot of them."

Legends says it will serve 14,002 pounds of turkey, 5,410 pounds of ham topped with 310 gallons of gravy. They also plan to serve 16,320 pounds of Cowboys Mac n Cheese.

"Those are the big numbers," Vasquez says. "Everything is homemade."

This year, Legends is working with Tyson to introduce chicken nuggets shaped like the Dallas Cowboys' logo.

"I'm personally very excited about it," says Vice President of Food and Beverage George Wasai. "It tastes fantastic. Our fans are going to love it."

Twenty nuggets are served in a box along with French fries. Tyson Dallas Cowboys Nuggets are also being sold at grocery stores. The company says it will donate $1 for each order through the holiday season to the Salvation Army.

Four items are returning this year:

The Thanksgiving Roll   Savory herb dressing, green beans, sweet potatoes, cranberry sauce and house pecan-and-hickory smoked turkey bundled and fried in a crispy delicious egg roll wrap. Served with turkey gravy for dipping.

The Thanksgiving Sandwich  Famous Cowboys Mac n Cheese, cranberry sauce, house pecan-and-hickory smoked turkey, savory herb dressing, green beans and turkey gravy on a large brioche bun.

The Thanksgiving Bowl  House pecan-and-hickory smoked turkey breast piled high with savory herb dressing, famous Cowboys Mac n Cheese, sweet potatoes, and green beans, drizzled with turkey gravy, served with fresh cranberry sauce and a brioche roll.

The Thanksgiving Hand Pie All that fans love about Thanksgiving, in a savory pie! Layers of savory herb dressing, fresh cranberry sauce, green beans, sweet potatoes, house pecan-and-hickory smoked turkey and turkey gravy enclosed in a flaky pie crust.

Concessions Chef Heather Fuller says items sold at concessions stands are designed for fans who will not be sitting at a table.

"We try to make things walkable because once you get your food, it might be a while before you actually make it to your seat," she says. "We want you to be able to enjoy it before it gets cold, but then also, we don't want you to have to sit down with a fork and knife."

In suites, she says Legends will be serving full turkeys, dressing, sweet potatoes and pie.
