Chef Edgar 'Dook' Chase IV began his journey into the culinary/restaurateur world at the apron of his grandmother, Chef Leah Chase. As an adult, he acquired not only a formal culinary degree from Le Cordon Bleu but also a Master of Business Administration and currently is Executive Chef of the legendary Dooky Chase Restaurant in New Orleans. Along with a few members of his family, he opened Chapter IV Restaurant this past January. It was an honor to chat with chef and I hope you enjoy it as much as I did.
