Ingredients
Eggs Benedict
- 2 medium tomatoes, cut into 4 slices each (optional)
- 1 teaspoon olive oil
- salt & fresh ground black pepper, to taste
- 8 slices Canadian bacon
- 4 English muffins (I like using whole wheat – or try making your own)
- 2 teaspoons distilled white vinegar*
- 8 large eggs*
Hollandaise Sauce
- 7 Tablespoons unsalted butter
- 3 large egg yolks
- 1 Tablespoon fresh lemon juice
- salt & fresh ground black pepper, to taste
