Peanut Butter Eggs
*2 cups powdered sugar
* 3/4 cup Creamy Peanut butter
* 1/2 stick butter softened
* 4 oz cream cheese
* 3 cups semisweet chocolate chips
* 1 tablespoon coconut oil/shortening
* 1/2 teaspoon salt (or to taste)
* Sprinkles, gel icing, mini baking cups, etc for decorating! (Optional!)
DIRECTIONS:
* Cream butter, cream cheese, peanut butter, vanilla, salt
* Fold in powdered sugar
* Refrigerate at least 2 hours preferably overnight
* Form into egg shapes
* Refrigerate again (freeze to speed the process)
* Dip into chocolate I recommend using the double boiler method vs microwave because the constant heat keeps things moving and these can get tricky to coat especially as they get warm
* Decorate if you chose!
