In the heat of summer, few things sound better than starting your meal with a cool drink…or ending it with a cool treat. Enter: the ice cream pie. And yes, it’s exactly what you think it is – ice cream, in pie form, in a crust!
The best part? You don’t have to buy then – they’re pretty easy to make. All you need in a baked pie shell or a graham cracker crust…add some softened ice cream (any flavor you like, really) and pop it in the freezer to harden. And yes, you can make them from any flavor you want – there’s no shame in this ice cream pie game!

Crush 15 Oreo cookies. Add 1/2 cup melted butter and mix until combined. Press mixture into a pie dish to form a crust (the crust must go 3/4 of the way up the sides of the dish). Or you know, go buy an Oreo crust at the store.Then, mix one-quart of softened vanilla ice cream with one-cup of chunky peanut butter, a teaspoon of vanilla until it’s smooth and well blended.Pour filling into crust and FREEZE!Just before serving, drizzle 1/4 cup chocolate syrup and sprinkle 1/2 cup crushed peanuts on top.And then you go impress people with your creation.
