Ingredients
8 small russet potatoes (about 2 1/2 lbs.)
4 tbsp. canola oil, divided
2 tbsp. butter
Kosher salt, to taste
1 1/2 c. grated cheddar cheese
8 slices thick-cut peppered bacon, cooked and chopped
2 green onions, sliced
