Liz's Kitchen: Aunt Fanny's Baked Squash recipe

This is another recipe out of one of Grandma George's cookbook and that book hasn't missed yet. This recipe was submitted by Aunt Fanny's Cabin in Smyrna, GA...and honestly, how do you not cook and recipe from somehow called Aunt Fanny. This recipe was easy enough to make but adding a little cheese or garlic would nudge this up to a great recipe. Still, this makes the perfect side dish!

Ingredients
3 lbs yellow squash
1/2 cup chopped onion
1/2 cup bread crumbs
1/2 tsp black pepper
1 tsp salt
2 eggs
1 stick butter
1 tbsp sugar
additional bread crumbs for topping

Instructions
Wash and cut up squash. Boil until tender; drain thoroughly, then mash. Add all ingredients, except 1/2 stick of butter, to the squash.
Melt the remaining butter. Pour mixture into baking dish; spread melted butter on top and sprinkle on bread crumbs. Bake at 375 for 1 or until top is brown.
