Liz's Kitchen: Aunt Gail's Blueberry Buckle recipe

Sweet, a little tart, and a lot simple! This Blueberry Buckle will make your next potluck or get together super. It's Aunt Gail's recipe and everyone always raves about it, so I thought it was time to share it with you! It's the perfect summer treat.

Ingredients
Filling:
6 cups blueberries
1/2 cup sugar
1 tbsp cornstarch
1 tsp fresh lemon juice
1/4 tsp salt
Topping:
3/4 cup flour
1/2 cup rolled oats
1/2 tsp baking powder
1/2 tsp salt
3 oz (6 tbsp) unsalted butter, softened
1/3 cup sugar

Instructions
Preheat oven to 375.
Mix berries, sugar, cornstarch, lemon juice and salt in a bowl. Transfer to an 8 inch square baking pan.
Make the topping by stirring together the flour, oats, baking powder, and salt. Cream butter and sugar in a mixer until pale and fluffy. Stir dry ingredients into butter.
Sprinkle topping over filling. Bake until top is brown, about an hour. Let cool before serving.
