Liz's Kitchen: Bacon Pineapple Roll-ups recipe

It's salty bacon and sweet pineapple, how could it go wrong? It's a perfect little bite for a party and pretty easy to make! This is another recipe out of Grandma George's church cookbook, but I did make just a couple of changes.

Ingredients
1 (8oz) can of unsweetened chunk pineapple
1/2 lb of bacon slices, cut in half crosswise
brown sugar
pepper
1 tbsp cornstarch
3 tbsp teriyaki sauce
3 tbsp dry sherry
2 tbsp water

Instructions
Drain pineapple and reserve juice. Roll 1/2 slice of bacon around each pineapple chunk. Place on a foil lined pan and sprinkle with brown sugar and pepper. Broil on high about 3 inches from heat source until bacon is cooked, flipping half way through (about 10 minutes).
Whisk together the reserved pineapple juice, teriyaki, dry sherry, water and cornstarch (I added a tbsp of brown sugar). Cook over medium heat, stirring constantly, until sauce thickens.
Serve with toothpicks for easy dipping!
