Liz's Kitchen: Beef and Broccoli Casserole recipe

Beef and Broccoli casserole

Casseroles are one of my favorites because it means easy meals all week. You can come home and not worry about having to make dinner, you just have to heat it. It also takes me back to the casseroles my grandma would make. This one is a simple beef and broccoli one because I was craving broccoli one week. It's a cheesy, creamy, tasty, and filling dish that you; 're going to love! Simple and tasty! Enjoy.

Ingredients
1 lb ground beef
2 heads broccoli, cut into smallish sizes
3/4 cup onion, diced
2 tsp Italian seasoning
3 tbsp butter
1 tbsp garlic
2.5 cups beef consomme
1 1/4 cup white rice, not cook (not instant)
10.5 oz Cream of Mushroom soup
1/2 cup milk
1/2 cup sour cream
2 cups cheddar cheese

Instructions
Pre-heat oven to 350.
Brown ground beef in large pot or dutch oven - add in salt, pepper and Italian seasoning while cooking. Remove from pot and drain grease.
Next, melt 2 tbsp of butter in the dutch oven and cook onions until soft, add garlic and cook for one more minute.
Add beef consommé, 1 tbsp butter and rice and stir. Bring to boil and then reduce to simmer and then cover and let cook for 10 minutes undisturbed.
Add the broccoli and cook for 5-10 more minutes to steam broccoli, again don't stir the rice - leave it undisturbed.
Now, turn off the heat and let sit covered to 10 more minutes. Then. add the ground beef back to the dutch oven along with the soup, milk, sour cream and one cup of the cheese and stir.
Put mixture in greased 9x13 and top with the rest of the cheese.
Cover and bake for 20 minutes.
