Don't be deceived by the name of this recipe, there isn't actually bacon in the dressing. I'm not sure why it's called Bacon Dressing but it was a handwritten recipe and I don't question those. It's a oniony vinaigrette over spinach, egg, bean sprouts, croutons and... bacon. It reminds me of a similar salad my Aunt makes every year at Christmas called, "Betty Salad". It is a fun spin on just serving lettuce with dressing and it's super easy to make and assemble.
Ingredients
1 medium onion, chopped (go on the small side of medium)
1 tsp salt
1 tbsp mustard
1 tsp celery seed
2/3 cup sugar
1/3 cup cider vinegar
1 scant cup oil (I used EVOO)
Instructions
Take the ingredients from onion to sugar and place in blender and blend for one minute until smooth. Then carefully and slowly add oil and cider vinegar alternately. You can store it for several weeks in the fridge.
Pour over spinach and add chopped eggs and bacon. You can also add bean sprouts, sliced mushrooms, and croutons.
