I love a piece of good homemade bread. Banana is my normal go-to but this zucchini bread recipe is certainly giving it a run for its money. There are a few differences in this bread from most of the others but the big one is that instead of grating the zucchini you're pureeing it. This will be perfect for breakfast or just a little treat throughout the day. I hope you enjoy the recipe as much as I do!
Ingredients
4 cups diced zucchini
1 cup oil
3 eggs
2 teaspoon vanilla
2 cups brown sugar
3 cups flour
1 teaspoon baking powder
salt to taste
1 teaspoon cinnamon
pinch of nutmeg
1/2 cupped chopped nuts (optional)
Instructions
Place zucchini in food processor and puree coarsely (you should have about 3 cups. Add oil, lightly beaten eggs and vanilla. Stir in remaining ingredients.
Bake in two greased loaf pans (or lined with wax paper) at 325 for 1 hour. Give it the stick test and then enjoy!
