Liz's Kitchen: Brussels Sprout and Bacon Hash recipe

Brussels and Bacon Hash

This is super easy and delicious recipe for fall, but to be honest, I make it year round. I thought this was perfect for the first day of fall becuase these ingredients scream fall. I generally make this as a side to pork chops but it will go great with anything! Hopefully, you love it as much as I do!

Ingredients (serves 2)
12 ounces Brussels sprouts, cleaned and halved
8 ounces sweet potato, cubed (medium-sized sweet potato)
1 tbsp olive oil
4 slices of bacon, diced
salt and pepper to taste

Instructions
Preheat your oven to 400 degrees and line a sheet pan with parchment paper.
Half your Brussels and cube your sweet potatoes. Add them to a bowl with the olive oil and salt and pepper. I'm a little heavy-handed on the salt. Toss and spread out evenly on a sheet pan. Place in oven for 15-20 minutes before flipping or tossing and cooking for 15 more minutes.
While the sprouts and potatoes are cooking, dice the bacon and cook in a large skillet pan. Once cooked, set to the side with bacon grease and bacon still in the pan.
Once the Brussels and sweet potatoes are done, add to the pan with the bacon and bacon grease and heat back up. Toss all everything together, making sure everything gets coated in the bacon grease.
Serve and enjoy!
