Liz's Kitchen: Candied Ginger Carrots

If my grandpa was making it, it had to be good! These candied ginger carrots are the perfect side dish for any meal - easy to make, delicious to eat. Here's to trying to make more meals at home in the New Year.

Ingredients
3/4 cup firmly packed brown sugar
1/2 cup orange juice
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 pounds medium-sized carrots, peeled and cut in 1/8-inch-thick rounds. (about 7 cups)

Instructions
Combine brown sugar, orange juice, butter, salt, and ginger in a large frying pan. Heat slowly, stirring constantly, to boiling.

Stir in carrots; cover and simmer for 25 minutes. Uncover, and continue cooking, stirring several times for around 10 minutes longer or until carrots are tender and richly glazed. Spoon into serving bowl and garnish with parsley, if wanted. (or just serve it out of the pan). Serving size is 8.
