These cheesecake tarts are easy to make and they get very close to tasting just like the most decadent cheesecake you can think of. The best part is they are a blank canvas that you can top with anything form fresh fruit to caramel sauce! Did I mention that were easy to make?
2 (8 oz) packages of cream cheese
3/4 cup sugar
1 tbsp lemon juice
1 tsp vanilla
Mix all ingredients, except Nilla Wafers, with a beater until light and fluffy. Put wafers in cupcake paper in a muffin tin. Fill 3/4 full and bake 20 minutes at 350. Recipe makes about 18 tarts. Put topping of choice on top once cooled (fresh fruit, jam, caramel..etc)
